Thai Green Curry   (gang khiaw wan)



















I think of all the Thai dishes that are enjoyed throughout the world the Thai Green Curry is probably one of the
favourites and one of the  most well-known. However when outside of Thailand, it is some times quite painful to see
some of the true authentic ingredients omitted or even replaced by substitute ingredients and I include some Thai
restaurants in this equation as well. To get the absolute best out of your Thai Green Curry you need to have all the
correct and fresh ingredients for this central Thailand region dish.

Thai Chicken Green Curry   (Gang Khiaw Wan Gai)  (แกงเขียวหวานไก่)  Ingredients and Cooking Method
For A Serving  of 4 People
.

•200 g Chicken
•1 table-spoon of Green Curry paste
•70g eggplants & Thai aubergines  (Makheua Puang & Makheua Chao Phaya)
•2 Cups of coconut milk
• 50 g sweet basil leaves (Bai Horapa)
•2 tablespoons of fish sauce
•2 big red chillies, sliced up
•half a tablespoon of palm sugar or white sugar
•5 kaffir lime leaves (Bai Makrut)
Heat the saucepan with 1 cup of coconut milk and cook until it becomes oil. Add in Green Curry paste and the
Chicken and cook until it produces a nice aroma, then add the fish sauce and sugar and cook briefly for a minute.
Add coconut milk and stir and then add the eggplants and boil for a few minutes.
Turn down the heat and simmer until it becomes thick. You can add more fish sauce or sugar if required, before
serving decorated with kaffir lime leaves and the sliced red chilli.
